This is Carol's recipe: Slice peppers in half, remove seeds and ribs. fill pepper slices with a mixture of cottage cheese, tomato pieces and cucmber pieces. The cottage cheese helps make the peppers not so spicy. Delicious.
Here's another pepper recipe for meat-eaters. Slice peppers (any kind) in half and lay in bottom of a casserole dish. Cook sausage (either Italian or breakfast style), add cooked rice, cheese and tomatoes. Stuff sausage mixture into the peppers. For larger peppers, you can stuff easily. For the smaller peppers it worked better to put the mixture on top of the peppers instead of trying to stuff them. Bake until bubbling and enjoy.
